The Comox Valley is known for its oysters and sells them all over the world. Baynes Sound is the protected water between Denman and Vancouver Islands and it is the home of a substantial shellfish industry. This trip will feature a stop at a deep water oyster farm.  Learn about this sustainable method of raising oysters from Greg and Hollie Wood, owners of Hollie Wood Oysters. The owners will give a demonstration on the workings of the farm and answer any questions. They specialize in small plump oysters that can be eaten raw. On the trip back to Comox, Chef Injenika Wilson will prepare lunch featuring shellfish that we just got from the farm!
